Much like other whiskey Bonders of the time J.J. filled his barrels with spirit from local distillery which he aged in his shop, but unlike the others J.J was an innovator. He used left over barrels of port, rum and Bordeaux to finish the whiskey in and created lucrative custom blends for richer families in town. this innovative attribute is something they hold in high regard, and something they are committed to bringing back to Irish whiskey

MIDLETON VERY RARE WHISKEY 2021

Baked orchard fruits with a touch of lime zest and kiwi. Mild pot still spices continue to build along with soft waves of vanilla, sweet coffee liqueur and cocoa powder. The texture initially round and full, gains additional wood spices with a delicate touch of clove oil and nutmeg adding a mild heat, giving balance to the sweetness.

A highly sought after limited release peated Cambeltown single malt, matured in sherry and bourbon casks complemented with a rich warming finish.

HEAVENS DOOR REDBREAST 50%

An exciting collaboration here between Heaven's Door and Redbreast! Created by duo of master blenders Ryan Perry of Heaven's Door and the renowned Billy Leighton, this is a 10 year old bourbon whiskey which has been finished in casks that previously held redbreast single pot still whiskey.
